Brewing Suggestions

We roast our beans in Sacramento, California, and our current offerings can be purchased here (local pickup & shipping available). Below are brewing suggestions for our beans. Thank you for your support!

New bag of beans? For optimal flavor, please allow 7+ days after the roast date for the beans to de-gas before brewing.

Espresso

Serving: 1 double shot (2 oz)

  1. Grind 18 grams of coffee beans to a fine size (this can vary depending on your grinder)
  2. Using a 1:2 ratio, you should get ~36 ml of espresso in ~30 seconds.

Notes

  • You may need to dial-in the beans a few times by adjusting the grind size, amount of coffee, and/or water temperature until you get your desired taste.
  • General rule of thumb: If your brewing time is too fast (well under 30 seconds), make your grind size smaller. If too slow (well over 30 seconds), make the grind size larger.
  • If it tastes good to you, then no adjustments needed!

Traditional Phin

Anatomy of a Phin

1. lid
2. chamber (body) – holds the ground coffee and water
3. filter plate (inside the chamber) – goes on top of the ground coffee
4. bottom plate – sits on top of your cup

Serving: 1 (8 oz)

Prep

  1. Heat your water to boil
  2. Grind 18 grams of coffee to a fine-medium size  (a little coarser than espresso, but finer than French press) 
  3. Place the phin chamber on top of your cup
  4. Pour some hot water into the phin chamber to rinse and warm up both chamber and cup
  5. Pour out all the water

Let’s brew!

  1. Add the ground coffee to the phin chamber
  2. Shake the phin chamber to even out the coffee then lightly place the filter plate on top of the coffee
  3. Pour one round of hot water (half-filled) and allow the coffee to bloom for 30-40 seconds
  4. Fill the hot water to the top of the phin 
  5. Place the lid on the phin 

The first drip should happen in ~5-10 minutes depending on your grind size.  The remaining coffee should take 10-15 minutes to drip completely. 

Notes

  • If you have a cup warmer, it can help keep the coffee warm while it’s brewing. Alternatively, you can create a water bath by placing your cup in a larger cup or bowl filled with hot water .
  • For cà phê sữa: add sweetened condensed milk (start with 3-10g then add more for your desired sweetness) and mix well
  • For cà phê (sữa) đá: add ice at the end and mix well
